What is the difference between a warmer and a rethermalizer?
Warmers are designed to hold food that has already been heated to the appropriate serving temperature of 150 degrees Fahrenheit or higher. Rethermalizers, on the other hand, reheat chilled foods through the HACCP "danger zone" to a safe serving temperature within a controlled timeframe. To meet industry acceptance criteria, rethermalizers must be capable of heating contents from 40-165 degrees Fahrenheit within 120 minutes and maintaining a temperature of 150 degrees Fahrenheit or higher.
This food warmer is compatible with full size and fractional size food pans (sold separately). Please note that fit may vary by brand, and some gaps could be present depending on the pan used.

So after about four months of use this product (which is a 165F holding unit that doesn't get moved or have any strenuous use) already failed and is getting a 'HHH' error which means the temperature probe is dead. Stay away from this unit as there is really no way to affordably repair it, one of those once it's broken (apparently in four months) throw it away.
