I'm Ralph, and I'm the head sculptor here at Carlo's Bakery. I'm going to show you some of my tips and tricks for working with the Satin Ice ChocoPan Modeling Chocolate. It's chocolate that you can sculpt like clay. It tastes like chocolate. It's really nice. You can do anything from very simple cartoony, childish animal figures and all the way to very finished looking sculptural pieces. So I'm going to take you through something very simple today. We're going to make a little bear. This has a really broad range of finishes. It's good for professional applications for the artist or the real serious cake artisans, and it's just as good for amateurs at home, or even kids. You don't have to worry about them eating it because it's edible. When I'm sculpting, I like to break things down into a few shapes. My big ones are spheres, teardrops, and tubes. I'm going to make his body a big teardrop or pear kind of shape. I'm going to give it a little bit of a curve. Now, one of the things you can do to make your different pieces of chocolate stick together a little better is if you give them a little bit of a scoring or hatch-mark kind of texture where you want the pieces to meet. You can add a little bit of water. I'm using a water pen. It's just a brush with a water reservoir in it. You can use that to stick your different pieces together. This chocolate comes in all different colors as well. Right now I have the chocolate modeling chocolate, which I can't stop smelling. The chocolate sticks to itself pretty well. You can add a little bit of water to help it, but it really wants to stick to itself. So when you're putting pieces together, there's not a lot of hassle. It also supports it own weight pretty well. It doesn't droop so much. You can erase the seams between pieces. It blends into itself really nicely. Look at that. That was just a few passes with the smoother, and I can eliminate the seam between those two pieces and make them seem like it's one continuous piece of chocolate. Now the modeling chocolate also picks up detail really nicely. As you can see, you can get very fine, little details. Seriously, it's as easy as that. It's just fun stuff. There are lots of other things that you can make out of modeling chocolate. The sky is the limit. Your creativity determines where you can go.
