Regal annatto seed is a unique spice that makes an excellent addition to any pantry! It features a brick-red coloring and larger, triangular shape. Though the spice itself is red, it imparts a rich, yellowish-orange color in your foods. Commonly used in Caribbean, Latin American, and Filipino cuisines, it is both a spice and a natural coloring in butter, rice, smoked fish, and cheeses. For coloring foods, you can steep 1-2 teaspoons of seeds in a 1/2 cup of warm oil or water for 10-15 minutes, straining before use. You can also saute the seeds in hot oil for 2-3 minutes until the color is released, straining before use.

Annatto seed is often used as a substitute for saffron's golden coloring at a fraction of the cost, but keep in mind that it does not duplicate saffron's unique flavor. Annatto seed has a slightly bitter, earthy, peppery flavor with a hint of a minty scent.
