Details

When your customers expect the very best, deliver a steak that's a cut above the rest with this Rastelli's 36 oz. Black Angus bone-in porterhouse! Black Angus beef is prized for its great flavor and generous, even fat marbling; this meat comes from Black Angus cattle that are hand-raised with care to ensure a tender texture and exquisite taste. This meat comes from Black Angus cattle that are in the top 2/3rds of the breed program for top quality meat! This hearty porterhouse steak is proof that good things come in twos; cut from the very back of the short loin, this steak includes both a succulent strip steak on one side of the bone and a delicate, tender filet mignon on the other. Though similar in appearance to a T-bone steak, this porterhouse is cut from farther back on the short loin, meaning it contains a larger medallion of the prized, lean tenderloin filet. Thanks to Rastelli's meticulous butchery standards, this porterhouse steak is expertly hand-trimmed for a uniform end result with none of the fat and gristle left behind by grocery store cuts. Because this large steak contains meat from two of the most prized sections, it is often referred to as the "king of steaks"! This porterhouse features a moderate amount of fat marbling in the strip, adding rich, beefy flavor to every juicy bite, while the filet mignon boasts melt-in-your-mouth texture and is tender enough to cut with a fork. When cooked to medium-rare perfection and served alongside tender, fresh vegetables or garlicky mashed potatoes, this large, prized bone-in steak will command attention on your menu!

This Black Angus porterhouse steak is wet aged for 21-28 days to ensure rich flavor and a tender texture that make it easy to prepare. Thanks to a lack of dense muscle and connective tissue in this cut, this porterhouse steak is perfect for fast cooking methods like grilling, searing, roasting, or broiling. The T-shaped bone in the center of the cut conducts heat throughout the meat, helping it cook more evenly and preventing drying out and shrinking. For optimal results, try dry-brining the steak in kosher salt overnight in your refrigerator. When it comes time to cook, rinse off the salt, pat dry with a paper towel, and sprinkle coarsely ground black pepper on each side. Because Black Angus steak does not need many other ingredients or sauces to deliver big flavor, this simple seasoning is perfect for enhancing the natural flavors of the beef while ensuring a crisp, brown crust and a tender, juicy interior. Ensure that you allow the steak to rest after cooking, then slice it against the grain for maximum tenderness!
