The flavor is nice, but very weak. It's basically thickened sugar water with a little lemon oil. The flavor is a little fresher and cleaner than pure lemon oil, but not as good as fresh lemon zest or oleo saccharum. If the flavor was stronger, this would be an excellent option for adding lemon flavoring without the acidic notes from lemon juice or the slight bitter note from commercial lemon oil. As it is though, I don't think you couldn't add enough for the lemon to be more than a supporting flavor without changing the consistency of baked goods. I decided to try this because I have been very impressed with Nielsen-Massey's vanilla paste in custards, but I don't think this is quite in the same league.
