Designed to bake, proof, and keep foods warm, this multifaceted Moffat E33T5/P10M Turbofan Bolt half size electric touch screen convection oven with steam injection and 10 tray holding cabinet/proofer helps ensure your restaurant, diner, or bakery is always prepared for high volume meal periods. This convection oven boasts 5.8 kW of heating power and a 2 speed bi-directional reversing fan system that spreads heat throughout the entire oven, ensuring evenly cooked products. It can hold up to 5 half size sheet pans and has 3 1/3" spacing for plenty of vertical clearance. The 3/4" digital display makes it easy to view the current temperature and time remaining on a set timer. The large 5.7" LED backlit touch screen controls are easy to use, and the icon driven program menu makes it easy for your employees to choose an option. With both program and manual modes, this oven is designed for ultimate precision and can be fine-tuned between 85-500 degrees Fahrenheit for ultimate controlled baking. To save you time and to make things easy, this oven can be set with up to 20 programs, allowing you to save and recall your most popular recipes with a push of a button. With 3 stage cooking and stage end alarms, you will always know exactly when to check your pizza, flatbread, or cookies.
Featuring a mechanical thermostat, you can fine-tune the proofer between 68-185 degrees Fahrenheit to store a wide variety of ready-to-serve dishes or proof bread to the perfect volume. Humidity is provided by moisture in the water tray of the bottom of the unit, and adjustable humidity settings allow for a completely customized proofing experience.
The proofer can hold up to 10 half size steam pans, separated with 2 7/8" of space, while a clear door provides outstanding impact and heat-resistance. Plus, the dual halogen lamps in the interior of the cabinet illuminate the products and allow for easy monitoring. This proofer is warmed by a 1.45 kW heating element and features a continuous door seal that ensures the warm air inside does not escape. In addition, the low velocity circulation fan system ensures that humidity is spread gently and evenly throughout the entire cabinet.
An easy-to-read thermometer for effortless temperature monitoring and a pair of dials is located on the front of the unit allowing you to easily adjust the thermostat. Thanks to 2 front swivel lock casters and 2 rigid rear casters, the cabinet can be filled and moved from your prep location to the serving area with incredible ease. With a compact width of 24", this holding cabinet / proofer is perfect for locations tight on space and will fit almost anywhere. This unit requires a hardwired 220-240V, 1 phase electrical connection for the oven and 110-120V electrical outlet for the proofer. The proofer also requires a 3/4" BSP male cold water connection with 80 PSI maximum/20 PSI minimum inlet pressure.
