Thanks to its individual analog controls, coupled with a simultaneous heat and moisture generation system, this Metro C539-MDC-L C5 3 Series full height moisture heated holding and proofing cabinet allows you to easily adjust temperature levels and control the amount of moisture in the cabinet, to create the perfect environment for holding and proofing any type of food at your desired temperature and moisture level.
The Metro C539-MDC-L full height holding and proofing cabinet features lip load wire slides set on 1 1/2" increments, to hold up to 8 full size sheet pans. Patented Insulation Armour technology increases the Metro C539-MDC-L C5 3 Series heated holding and proofing cabinet's overall energy efficiency, and protects your employees from touching hot surfaces.
The full height Metro C539-MDC-L heated holding and proofing cabinet's clear polycarbonate dutch doors provide instant product recognition without opening door, reducing heat loss. It requires a 120V electrical connection.
