This Metro C535-HLFS-4 C5 3 Series half size holding cabinet lets you hold at any temperature between 80 and 200 degrees Fahrenheit with full temperature control, so you can create the perfect environment for any type of food! This unit's cabinet is made of aluminum and is insulated with red high density polyethylene Insulation Armour™ to ensure optimum heat retention and energy conservation while maintaining a cool-to-the-touch exterior. Its exterior is also dent, impact, and stain resistant with molded-in handles for easy maneuverability.
This unit features a digital thermometer, recessed control dials, a master on/off switch, and power indicator lights, which are all removable for thorough cleaning. Thanks to its thermostatically controlled, forced convection system, this holding cabinet has fast heat up and recovery times, while its solid door is fully insulated with 1" fiberglass to retain heat.
Included with this unit are 14 pairs of fixed wire slides, which are made of 1/4" diameter nickel chrome electroplated wire and are welded on 3" spacing. This holding cabinet can be transported easily due to its (4) 5" donut neoprene wheels, 2 with brakes. These wheels have a double ball bearing swivel, ball bearing axle, and are nickel plated.
This low wattage unit operates at 120V and has an output of 1440W.

I LOVE this thing. I need low wattage because i move it around my building and i dont have 220 outlets all over the place. It heats evenly and holds a lot for its height. Its always cool on the outside, even when its 200 degrees inside. Good, even heat distribution, so long as you load it correctly and not block natural currents of convection. Ive used it extensively as a dehydrator for peppers. The only gripe is the wire slides are just a bit too close together, and the jam around the door is a millimeter or two too narrow, so putting a full 2" deep pan is a tight fit. I had to bend the edges of the pan a bit so that they would get through the door better, but the wire slides are still pretty tight.
