Easily strain custards, purees, soups, and sauces with this Matfer Bourgeat 017365 8" Exoglass medium mesh sieve strainer! This durable, stainless steel strainer features the heavy-duty, reinforced Exoglass composite material designed for intensive use and is heat resistant up to 482 degrees Fahrenheit. It features a one-piece, ergonomic handle to provide both comfort and stability while allowing the user to keep their hands at a safe distance from heat. In addition, the handle is insulated for added protection from heat and built in hooks, opposite the handle, allow for hands-free operation.

This Exoglass strainer boasts hygienic medium stainless steel mesh to properly strain various foods. When not straining foods, you can also use it to sift flour and other dry ingredients to aerate them prior to use.

While the fine mesh strainers and chinois by Matfer get far more use, these medium mesh strainers are perfect where smoothness is not a concern. For things like stocks and certain purees, soups, and sauces, we use the medium strainers as it saves time versus the fine mesh versions. I know the price is outrageous for a strainer, but Matfer makes quality commercial items. The quality of this item (read durability) will pay you back multiple times over. Buy once, cry once. I highly recommend this Exoglass medium mesh strainer.

Wow! Just wow! I compared this one to the other strainer I have at home and the mesh is so much sturdier! It’s is very well built and I know it’ll be able to withstand the pressure of spatula! Just wow!
