Serve your customers delicious wood-smoked meats using this J&R Manufacturing Little Red Smokehouse 250 FSE wood-fired smoker with electric heat. This compact unit is designed to cook up to 250 lb. of meat at once, allowing it to accommodate up to 50 slabs of ribs, 10-15 briskets, or 150 halves of chicken. This smoker delivers impressive performance, even with a compact footprint, making it an ideal choice for kitchens with limited space. The advanced high-velocity convection air system ensures uniform cooking across all racks, eliminating the need to rotate the meat. You can even leave this unit unattended for up to 14 hours on a single load of wood, making it an economical way to prepare large quantities of meat with minimal labor.
This unit includes (10) 28" x 20 1/2" fixed racks that are removable for easy cleaning. The large, full-width doors are lined with stainless steel, and they allow for easy loading, unloading, and removal of the racks. The firebox is constructed with refractory lining and high-temperature fiberglass insulation, enabling live coals to last for up to 72 hours, so the fire only needs to be started once. The electric element in this model aids in maintaining consistent cooking temperatures and enhances wood-fuel efficiency, ensuring your meats are smoked to perfection while avoiding the "gassy" flavor often found in gas / wood hybrid smokers.
For ease of ventilation, this smoker can be vented directly with a 6" Class A stack or placed under a Type I exhaust hood, depending on your kitchen setup. The damper and fan system works seamlessly to draw fresh air into the chamber and exhaust smoke out through the stack, preventing smoke from entering your kitchen. This system also helps enable easy fire starting. With an unbeatable combination of durability, efficiency, and compact design, the Little Red Smokehouse will be a long-lasting and valuable addition to any barbecue operation. This unit requires a 208/240V electrical connection and must be hardwired.
