I love these cheesecake pans and will never go back to a traditional springform pan. My cheesecakes bake evenly and much faster than in the steel springforms I grew up using. The pans are lightweight but feel very solid and can take a lot of abuse. I was worried that the removable bottom might leak but they appear largely watertight (not sure how that works). I handle the removable bottom with care so it does not get bent. - I am sure this is just an abundance of caution on my part. I am going to buy more of the smaller sizes next.

For the last couple years I've been using the Fat Daddio 9" x 3" and 10" x 3" pans to make cheesecakes. The removable bottoms work well, and because of the design there are no other parts to break like on the usual springform pans.
