Additionally, this emulsifier is great for using to improve the texture and maintain the freshness of your pastries! Use it to ensure the starches in your dough are completely and evenly blended to increase the softness, volume, and structure of your baked goods. When preparing frozen desserts, use 3-5 grams per liter of base mixture. For pastries, use 8-20 grams of product per kilogram of dough.
