It will reduce shrinkage by 15-20% due to its slow cooking at up to 350 degrees Fahrenheit, which also improves the taste and overall quality of your food. This versatile package boasts two ovens stacked one on top of the other to give you increased cooking capacity and convenient independent controls. Customize and monitor the progress of your meals and bulk food items with the easy-to-read and easy-to-use solid state electronic controls, LED digital display, and thermometer. As an upgraded deluxe model, this unit boasts deluxe controls, which include the ability to program up to 18 menus. A 6" meat probe is also included with each compartment. Designed to accommodate up to 240 lb. of meat, this full height cook and hold oven will save you time and precious kitchen space.
The oven's frame and interior are made of stainless steel, with coved corners to prevent food particle build-up. Each compartment has pan slides set on 3" centers, allowing it to accommodate up to a total of 18 full size sheet pans. The body of the oven is made of a durable stainless steel and is fully insulated. For your convenience, the doors come outfitted with a silicone gasket for a tight seal and with a high temperature, ceramic, magnetic latch that is easy to open, but provides a secure closure. Plus, this latch is antimicrobial, which helps to fortify your kitchen environment against germs.
To make installation and transportation easy, this cook and hold oven comes with 4 heavy-duty 5" casters to enable mobility, and field reversible doors for versatility. Because the unit does not need to be placed under a ventilation hood in most locations, you can even install the oven wherever it will serve you best. A 240V, 3 phase electrical connection is required for operation.
