This model is also capable of cold smoking fish, cheese, chocolate, or other foods through use of a Kold Keeper (sold separately). Customize and monitor the progress of your meats and meals with the easy-to-read and easy-to-use solid state electronic controls. This unit comes with touchscreen controls which offer a user-friendly, high resolution interface that is glove-safe and easy to read. It features shelf timers and collects HACCP data with timestamps. It also comes ready with a thermometer, 18 programmable menus, and a 6" food probe for more accurate cooking. Designed to accommodate up to 120 lb. of meat, this cook and hold oven will save you time and precious kitchen space.

The cabinet features 3 stainless steel wire grids and removable stainless steel pan slides on 3" centers that can hold up to 8 full size sheet pans. The oven's interior is stainless steel and fortified with an interior stainless steel frame, and features coved corners to prevent food particle build-up. An included drip pan ensures that saucy and juicy meals won't make a mess, meaning that you can prevent slipping hazards to keep your employees safe.

The body is made of a sleek stainless steel and is fully insulated. For your convenience, the door comes outfitted with a silicone gasket for a tight seal and a high temperature, ceramic, magnetic latch that's easy to open, but provides a secure closure. Plus, the latch is antimicrobial, which helps to fortify your kitchen environment against germs.

This cook and hold oven comes with (4) 5" heavy-duty casters to enable mobility and a field reversible door for versatility. For ease of installation, the unit includes a voltage selector switch and can operate on either a 208V or 240V, 1 phase electrical connection.
