How can I best maintain the non-stick qualities of this item?

To prevent food from sticking to your non-stick surface, we recommend lightly coating it with oil and wiping off any excess with a soft cloth or napkin. Applying sprays on non-stick coatings can cause food to stick more readily than using a fat or oil. Sprays can leave a glue-like coating, often missed during the cleaning process, which will begin to build up and cause foods to stick. Additionally, metal utensils and abrasive cleaners should not be used with non-stick surfaces to prevent scratching and damaging the coated surface.

How is the top diameter measured in frying pans and woks, and how accurate is this measurement?

The top diameter is the measurement across the pan, from the interior of one side of the rim to the other. These measurements are approximate because many frying pans and woks have a curved upper rim, making precise measurement difficult. The standard naming convention uses top diameter, so while multiple brands may offer a 10" pan, there may be slight variations in size between each brand's 10" pan or wok.

My business is at a high elevation; does this change anything when I order gas cooking equipment?

Many gas equipment manufacturers need to make adjustments to the equipment so it operates correctly at elevations over 2,000 feet. Sometimes we can special order from the manufacturer and have your cooking equipment delivered ready-to-go, but in cases where your unit is in stock and waiting to ship, you’ll need to have a qualified service technician come to your location and alter your unit at the time of installation so that it is compatible with a higher elevation. What cooking temperature is optimal for use with my non-stick item?

Non-stick cookware is best used in low to medium temperatures in order to ensure longer-lasting use. Using this product in high temperature applications can cause flaking on the non-stick coat. Sustained and excessive temperatures above 500F will damage the non-stick coating. This will lead to smoke, peeling, and/or flaking.

What's the difference between a riveted and a welded handle?

A riveted handle is connected by small metal pieces (called rivets) that are crushed between the handle and the pan body to attach them together. This type of handle is more common on copper and aluminum cookware.

For a handle to be welded, the metal must first be melted and then adhered to the pan body. This creates a strong bond that leaves little to no space in between, so bacteria and other food crumbs can’t collect and cause sanitation issues. Both are long lasting solutions for fry and sauce pan handles because they are durable and can withstand heat.
