How can I properly care for cast iron surfaces?
In order to prevent unwanted buildup of oils, grease, and food, surfaces should be cleaned after use while still slightly warm. Harsh chemicals or scouring pads should not be used—only hot water and a cloth or sponge are needed. If some areas require extra cleaning, a mild scouring pad can be used.
Cast iron does not have a coating. It typically has a pre-seasoning. If it looks like the black layer is flaking, it may actually be the seasoning (baked-on oil) coming off. This can happen if the seasoning was built up too thick, didn't bond properly, or was weakened by acidic foods, harsh scrubbing, or soaking. Sometimes it's also just carbonized food residue loosening, which looks like black flakes but doesn't cause damage to the cast iron.
If the cast iron rusts or the surface becomes uneven, rust can be scrubbed off, and the seasoning can be rebuilt by applying oil and heating the pan again.
All wood products should be hand washed. The heat and chemicals of a dishwasher are harmful to wood’s naturally porous texture. If your product begins to show signs of wear, its finish can be restored with a food-safe wood conditioner. First, clean and dry the wood. Then, apply the wood conditioner with a soft cloth or paper towel. Once the conditioner has soaked into the item, buff off any excess with a clean cloth. Having excess conditioner on a wood board will make it feel sticky or oily.
