Details

Have customers lining out the door to try your authentic Italian-style neapolitan pizza with this Caputo 00 pizza flour. 00 flour refers to the fineness of the milling, giving this flour an extremely fine texture that produces a very soft, flavorful thin crust. With the help of a wood fired oven, this crust will produce the traditional, authentic neapolitan pizzas with a soft, tender bottom and bubbles in its cornicione, topped with pureed San Marzano tomatoes, mozzarella cheese, fresh basil, and extra-virgin olive oil. With this flour, you can bring the taste of Italy to your customers in the comfort of your Italian restaurant or pizzeria.

Made from top-quality soft wheat flour that is additive free and all-natural, it is milled slowly for optimal water absorption and superior yield. Its high protein and gluten content result in a consistent, long rise dough. To make an award-winning dough, mix this flour with neapolitan yeast, water, and salt and knead by hand or with a mixer on low-speed. Then, once your toppings are in place, cook by a wood fired, gas, or electric oven at 700 - 1000 degrees Fahrenheit for no longer than 90 seconds to achieve the classically delicious neapolitan crust.

Caputo is a third generation Italian family company that began in 1924 when Molino Caputo returned back to Italy from the United States to start a flour mill and pasta factory in Capua. Their milling process follows the milling traditions of Naples, Italy, while using only the latest technology and sourcing only the best, highest-quality wheat every season and are recognized by the leading Neapolitan pizza certification associations. Due to their unwavering commitment to their values and great pride in the city and country they represent, Caputo has grown to become the leading brand of "00" flour in Italy and the United States. Stock your Italian restaurant with any of Caputo's flours to provide an authentic, unparalleled flavor to your recipes!

During these hard times, I would like to thank this business for not jacking up the price of the flour I ordered. The person on another site that I buy from, went from $69 to $91 one month later and now they are selling a 55 lb bag of flour for $140. What a loser! I will not be ordering from them ever again, even if I pay a slightly higher price from this vendor, after everything goes back to normal. I am now boycotting the other vendor.
The perfect flour for the perfect pizza. I am so stoked with this fine flour i create from bread donuts to pizza and i love every bit of it. Thank You!!!
The Caputo 00 Pizzeria is the gold standard of Neapolitan style pizzas and does not disappoint. Switching to this flour made a larger difference than expected for obtaining light and airy crusts with <24 hour room temperature fermentation times. We cook at approximately 800-900 degrees F and would not recommend this flour below ~700 deg F. Packaging from WebstaurantStore was very good and the flour was fresh.
