Caputo “blue” pizzeria flour is one of the best 00 flours available. Designed for >700 degree wood ovens, it performs perfectly for that application. If you are cooking at a lower temperature, their Chefs flour or American would be a better choice. The bag I received had a best by date about a year in the future, you can’t ask for more than that. Good on Webstraunt Store for charging a real wholesale price also. The only way to get it cheaper is to walk into a restaurant supply store for cash and carry, assuming they have it, or order a pallet.

I make 5 lbs at a time just mixing and kneading bare handed. This flour is silky and a joy to form. I tweaked the second batch a bit and the pizza's have been great. You can't make crusts like this with bread flour thats for sure!!

This is a great product, as I have used in the past, and at a great price at webstaurantstore.com. I would have given this a (1) Star due to shipping and arriving damaged, resulting in me having to throw out the entire bag due to moisture ruining it. Instead I am giving webstaurantstore.com a 5 Star rating for their customer service response to the issue. Once I submitted photos and the issues, they immediately asked if I wanted a replacement or refund. Only feedback for their shipping team is to wrap this item in a bag, as it would have avoided me having to throw it out due to transport damages.

During these hard times, I would like to thank this business for not jacking up the price of the flour I ordered. The person on another site that I buy from, went from $69 to $91 one month later and now they are selling a 55 lb bag of flour for $140. What a loser! I will not be ordering from them ever again, even if I pay a slightly higher price from this vendor, after everything goes back to normal. I am now boycotting the other vendor.

The Caputo 00 Pizzeria is the gold standard of Neapolitan style pizzas and does not disappoint. Switching to this flour made a larger difference than expected for obtaining light and airy crusts with <24 hour room temperature fermentation times. We cook at approximately 800-900 degrees F and would not recommend this flour below ~700 deg F. Packaging from WebstaurantStore was very good and the flour was fresh.
