This really isn't very finely ground at all. I run a gluten free bakery and make my own flour blend. The price on this brown rice flour was great, so I ordered the 25 pound bag thinking I could just rest my batter longer to overcome the coarser grind. Nope. I'm so disappointed in it. I knew it wasn't a superfine grind and thought it would be ok, but instead I have about 20 pounds left that I really don't care to use. My breads are ok using this, but muffins, quick breads and cookies all have a grittier texture. I even let the cookie dough age for 3 days in the fridge and it's still gritty. I'll buy BRM for other products, but definitely not this brown rice flour.
