Honestly we don't really write reviews, however, we have been using this pasta machine for just about two years and we've had no problems whatsoever (knock on wood). Additional dyes are expensive (about 200 to 300 each for non-generic pasta shapes) and have to be ordered through third parties. We have everything from semolina, durum, organic whole wheat, and flavored pasta doughs without any problem. The auger, bronze dyes, and kneading arms only need a soak in water and a light cleaning with a soft brush to get them clean. Just make sure to train your staff to NOT stick off-set spatulas in the machine to remove any 'clogs'--teach them to not over fill it and if there is a clog: unplug it, open the top, and remove excess with a spoon (you just have to relieve the pressure and it will start extruding again).
