Glass pie pans are cheap, but sturdy. They’re also non-reactive and conduct heat more quickly than stone. In glass, the butter melts quickly, which releases steam to preserve the dough's flaky layers and turning out a crust that's golden and crisp overall. I love the Anchor Hocking brand because it produces reliable and consistent results.
