How to Use a Cake Leveler

Hi! I'm Emily Tatak from the Wilton Test Kitchen. Today, I'm here to show you how easy it is to level and torte your cakes. When a cake bakes, it sometimes develops a dome top, also known as a crown. By removing the crown, and leveling your cake, you're creating a flat surface, perfect for decorating. Leveling is crucial because it prevents cracking when stacking and filling your layers. There are two ways to level and torte your cakes. You can use a serrated knife or a cake leveler. To begin, securely attach your cake to a cake board with a small amount of icing - just like this. This is crucial because this prevents your cake from moving around while you're leveling. If you're using a cake leveler, you first want to place your cake on a flat surface. Place the leveler next to your cake, so you can see how high to set your wire. You want to remove as little cake as possible, while creating a flat surface. There are notches all they down the side of the leveler, numbered 1-9 for easy adjustments. In this instance, I'm using a number 2. So, using a gentle sawing motion, I'm going to cut through just the top of my cake, and remove the crown. I like using a cake leveler because it creates an even and straight cut, every time. This leveler can be used on any cake, round or square, up to 10 inches, or even a 9 by 13 cake. If you're using a serrated knife, place your cake on a turntable. While slowly rotating your turntable, use a gentle sawing motion to remove the crown. From here, you can leave your cake "as is" or you can cut it into multiple layers, called torting. Torting adds height and gives you the opportunity to add additional filling to your cake. If you're using a leveler, place your cake on a flat surface. Re-position the wire, so it lines up right in the middle of your cake. In this instance, it's about a number 7. Using a gentle sawing motion, I'm going to cut right through the center of my cake, giving me two equal-height layers. Carefully remove the top layer of my cake with a cake board to prevent cracking and breaking. If you are using a serrated knife, place your cake on a turntable. Position your knife in the middle of the cake, keeping it level. Place one hand on top of the cake and, using a gentle sawing motion, cut horizontally through the cake, while rotating the turntable.     You can easily step your cake baking up by using this cake leveler from Wilton. I've used it on 6" smash cakes and 8" cakes. Watching cake tutorials and hearing bakers claim they use buttercream to level their cake is disappointing when I try and do the same and my decorated cake turns out lopsided. I've also tried leveling a cake using a knife as easy as it sounds, it won't come out as perfect as when you use the leveler. This leveler will make your cakes look professional and your friends will be impressed. I think every home cake baker should have one. After baking the cake, let cool completely then throw it in the freezer for 30 minutes. You will get less crumbs if the cakes are frozen. The blade is not a blade but more like a wire so you can never get cut or worry about someone else getting cut. It's safe and the wire is taunt. It is so taunt that it is a bit hard to adjust to height. To do so, I put one end against my hip bone and press down on the other end until I can move the height of the wire down. Read Less Read More
    This works great for us. It is sturdy and easy to use. It holds up well and we have had no problems with it. at all.

    i saw a video online where they used a leveler so i wanted to get one to try it out. this version from wilton does a good job but if your cake is a little warm or soft, it ill likely get torn a bit if you're not careful. it generally gets the job done though.
    The Wilton 10” Small cale Leveler is a great cake cutter! I highly recommend to anyone who makes cakes from once a year to daily cake makers!
    This is the perfect addition to my kitchen. It works great to cut the layers in uniform sizes. My only complain is that the cutting wire is a little flimsy.
    The size and function of this leveler are both great. My one drawback for this is that the lowest height setting is too high to make a thin enough layer for torting a cake into three slices. If you normally only cut your cakes in half, then this is definitely for you. I would recommend this product.
    While I’m happy to have this tool, there’s definitely a learning curve to it. Trying to level out a Genoise sponge cake is a no-go (i still have to use a bread knife), but for a cake that’s softer on the edges or that’s already been cut into a bit, it gets the job done.
    Plan on using this a lot for leaving and splitting cake for more layers, I had an older model which was hard to use cause of the handle but this one is easier.
    This makes leveling cakes for me easier. I now can have even smooth layers of cake using Wilton Leveler. It is easy to use and adjust to different levels.
    If you've ever wondered why your layer cakes are a lumpy mess, it's because you haven't invested in a cake leveler. I love this leveler from Wilton which is super sturdy and easy to use, yielding perfectly flat cakes every time. I never make a cake without it.
    I like this leveler. It's accurate and easy to use. However, I do wish I could get a few more levels with it. Otherwise, it definitely gets the job done.
    This cake leveler works great for cakes smaller than 11" in diameter. There are small feet on the bottom of the leveler to keep it perpendicular with your counter, and you can easily adjust the height as needed. The braided wire cuts through the cake easily if you use a sawing motion.

    This cake leveler is ok. It feels cheap but it works really well when you use it quite a bit. Just be careful because it’s very flimsy.

    A cake leveler is so much nicer than trying to cut the top of a cake off by hand, or worse, spending a ton of time on those "kitchen hacks!" techniques with toothpicks and dental floss and lord knows what else. This leveler is great because there are set heights you put the wire at, and both sides are numbered so you can be sure that the wire is at the same height on both sides. The wire is also finely textured so that it cuts through the cake better. For delicate cakes, I prefer to cut halfway, then come from the other side to cut the other half, because as the leveler comes out of the cake it can rip slightly larger crumbs out. It cuts more cleanly as it enters the cake than when it leaves it.
    The wilton cake leveler is to helps to cut your cakes into even layers. Wilton is a trusted brand and makes quality products. This cake leveler is no exception. It is easy to use and will make your layered cakes look perfect.
    Not particularly sturdy, but it gets the job done. I'd say this is really more for occasional use than for being reliable for every day usage. We'll be replacing it with a solid version instead of the wire.
    Works pretty slick. Makes a nice, clean cut through the cake. Could be a little easier to adjust the height but not a concern enough to not try it.
