Vulcan VRH88 Details

Cook, reheat, and hold food in this all-in-one Vulcan VRH88 cook and hold oven. Great for schools, healthcare facilities, and hotels, each compartment of this unit can hold (8) 18" x 26" sheet pans on 3" centers or (16) 12" x 20" x 2 1/2" steam table pans. Plus, it comes with 3 wire shelves. With a large capacity, you can easily and efficiently prepare meals and keep them at a proper serving temperature for safe service. You can even use this unit to rethermalize your previously plated meals for increased efficiency at larger banquets and events.

Designed with individual knob-style controls for each compartment, this unit is capable of cooking temperatures up to 250 degrees Fahrenheit and holding temperatures up to 190 degrees Fahrenheit. The oven controls feature an on / off switch and knobs to set the cooking time, cooking temperature, and holding temperature. For added convenience, this unit cooks by time to automatically convert from cooking temperature to holding temperature so you don't have to worry about overcooking your food during the holding process.

This fully insulated oven features two separate compartments and is designed to create flavorful results thanks to the low-speed air circulation and low-temperature cooking. The low-speed fan provides even heat distribution for consistent cooking, which also results in a natural browning of meat for a visually appealing, caramelized product.

Stainless steel construction adds long-lasting durability, and an integrated steel frame provides structure and stability. This oven is fitted with 2 magnetic action, half doors for a secure seal, while heavy-duty hinges withstand constant opening and closing. For increased mobility, 4 heavy-duty 5" casters are supplied, including two swivel casters with brakes and two rigid casters. This item requires a 208/240V electrical connection.
