Yes, you do. We do not recommend running warmers like this without water, as you will run the risk of burning out your element or scorching your food.

Verified Purchase
This kettle looks great in front of the house for our self serve soup concept. It performs well, but the outer coating started to peel after about one year from the heat of using it. I still think it is worth the purchase price because after the peeling started, we moved it to the back of house and it is still performing fine.
