Today we're going to talk hummus. Hummus is one of my favorite dips in the entire world. Hummus is made from chick peas, lemon juice, tahini, garlic, olive oil, salt, and cayenne pepper all spun up together. Now the key to a great hummus is a great chick pea. Furmano's makes that easier with our easy-tear pouches. We're going to start off by draining our chick peas. Now when I had the chick peas to the food processor,
I like to put the chick peas to one side of the processor. That will allow me to add those liquid ingredients to the other side of the processor. This allows a vortex to form and pull those beans down in the food processor that much more quickly and will expedite the process of blending all this stuff together at one time. Now let's add our lemon juice, garlic, salt, and cayenne. Hummus is great on its own, but it's also a great blank canvas for other flavors. One way to change a flavor of hummus is to use other flavors of beans. Here I made a black bean hummus, using the exact same ingredients in the exact proportions as before I just used black beans instead of chick peas to get a little different flavor in there. You're also able to add ingredients post-processing. When you go to the grocery store and you see hummus in the deli sections, often there's that little mixture of products right on top of it. In our case here, we're going to use chipotle, and sun-dried tomato. Those small additions makes your hummus a little more complex in flavors. To take that idea a bit further, you can put together your own hummus bar concept, where you can display various types of hummus along with those add-on ingredients that they're seeing at the grocery store, like pesto, roasted red pepper, and harissa. By having those available for your customers, they are able to customize that hummus with their personal likings, which going to bring them back to spend more time in your establishment. And while hummus is a great dip, don't just use it there. You can replace the mayo, getting rid of some of that cholesterol in the sandwiches, and also as a base for flatbread.
