Hi, I'm Chef Ryan Norman with Alto-Shaam, and today I'm going to show you how to run the cleaning cycle on the Alto-Shaam CTP combi ovens, as well as how to descale your boilerless oven. So what I do to initiate a cleaning cycle... right now we're on the home screen, and you'll notice on the bottom of the controls there are little suds, or cleaning bubbles. We touch that, and now that brings up our selection for what level of cleaning we need. Anything from a light rinse to a 3 1/2 hour heavy-duty cleaning cycle. My oven's not that dirty today, so I'm going to run a light clean. As soon as I push that button it tells me that I'm going to need one cleaning tablet, and I'll have to put that in the oven. If the oven was too hot right now, it would tell me that it needs to cool down, an icon would come up, we'd open the door, and the oven would cool down. But we're below that temperature, so we can go ahead and continue with the cleaning cycle. I'm going to remove my tablet from the package. You'll notice that I'm wearing gloves. It's good to wear protective gloves. So I remove the drain cover from the bottom of the oven. I'm going to place my tab in there. So at this point I have my cleaning tab in the oven, and we're also going to descale our oven today. So we have this optional scale-free powder, and I'm just going to take about 1/3 of a cup and put it right down in the drain with my cleaning tablet, replace the drain cover, and now we're going to have a clean and descaled oven. So we have our cleaning chemicals in the oven ready to go. All we have to do at this point is go ahead and hit the green check-mark, and the oven will start to clean. At the end of the cleaning cycle, we do have the option for the oven to shut off. So if this was at the end of the workday for me, I would initiate the cycle, go home for the night, and when I'd come in in the morning, my oven would be clean.
