Steaming proper milk is mostly about the wand placement. Begin by placing an appropriate cloth over the steam wand and selecting the purge button. This is important to ensure that you've removed any potential condensation from inside the steam wand. You really don't want water in your milk. Next, lift the steam wand and bring the pitcher spout next to the steam wand and use the spout as your placement guide. Depending on whether you're left or right handed, tilt the pitcher so that the steam wand is opposite your non pitcher holding hand. Keep the wand and the pitcher spout married together. Now, raise the pitcher so that the steam tip is about 1/4" to 1/2" below the surface of the milk. Activate the Intellisteam selection. Immediately place your free hand onto the milk pitcher to stabilize it and to fill the temperature. At this point, there should be a slight whooshing sound as the air is injected into the cold milk. Once you begin to feel a bit of heat, raise the pitcher slightly to plunge the steam wand beneath the surface to stop the introduction of air. Continue to hold the pitcher in a tilted fashion to encourage the whirlpool effect. When the Intellisteam automatically heats the milk to the proper temperature, it will stop. Lower your pitcher and set it on the counter. Place the appropriate cloth over the steam wand and wipe to remove any milk from the outside. Then select purge to ensure all the milk is purged from the inside of the steam wand. Gently tap your pitcher on the countertop to remove any large bubbles. Swirl to incorporate the froth into the milk. This is called grooming the milk. Your milk is now ready to be added to your beverage.
