This machine has a maximum capacity of 40 lb., and it can cook full batches of most candies in as little as 20 to 60 minutes. It allows you to precisely set and monitor exact cooking temperatures, and it offers separate product and kettle temperature control with a maximum temperature of 350 degrees Fahrenheit. Its dual-lid system provides enhanced control and flexibility depending on your specific recipe. This allows you to fully close the kettle to lock in moisture and prevent over-drying or to keep it vented while cooking.
