Hi, I'm Ralph. I'm the head sculptor here at Carlo's Bakery. I want to show you some tips and tricks that will help you when you're using Satin Ice ChocoPan Covering Chocolate. So the covering chocolate is a little more elastic than the modeling chocolate. It's very good for draping or covering cakes. You could also use it on cookies, cake pops, or cupcakes, really anything. It's very pliable. It's oil-based so it won't dry out. It's a very cool product. I think the nicest thing about it, is that it tastes like chocolate. So I'm going to do a couple of different things with this. I'm going to cover some cupcakes like they were little cakes and do some different decorating techniques on them. The thing I love about this product is that you don't have to put down any cornstarch when you're working with it. It's not going to stick to your work surface the way a fondant might. You can roll it out and peel it right up. I'm just going to ice this real quick. You probably don't even have to do this honestly. It will stick without it. I'm going to punch out some of our covering chocolate. I'll give it a shot. It will stretch, so I can cover the whole thing. There we go, just with like gentle pressure. Yeah, I didn't need that buttercream. I could have done this without it, but how cool is that? The idea of being able to ice a cupcake- you can just go straight onto the cake itself. You save yourself a step and therefore some time. We've immediately got like a really cool just sort of pop, like that nice finish texture on there. Take a little bit of yellow. Look at that. It kneads up so nicely. This is good for those of you who don't like to make messes. I got a little plunger-cutter here that has some details that I can press down into the shapes that I'm cutting out. So I can cut it, and I'm going to push down on the plunger, and I've picked up all that detail. Okay cool, and that sticks to itself really beautifully too. Like if that doesn't have some pop. That's cool. Not only does it look really great, but it has like a really nice gourmet chocolate taste. Just take a look at all of the different applications that this covering chocolate has to offer- cakes, cookies. The possibilities are limitless.
