Metro HBCN8-AS-T Details

This Metro HotBlox holding cabinet features hybrid convection-radiant heating technology so you can create the perfect environment for both moist and crispy food! It lets you hold food at any temperature between 90 and 190 degrees Fahrenheit with full temperature control. This unit's cabinet is made of aluminum and its field-reversible, solid door is insulated with 1" thick high-density fiberglass to ensure optimum heat retention and energy conservation. The double-hinged door also has an adjustable air intake vent, a chrome-plated magnetic latch and lever release, and removable santoprene gaskets.

This unit features an analog control with a master on/off switch and an electro-mechanical thermostat with an always-on thermometer, making it great for transportation. Thanks to its thermostatically controlled, forced convection and built-in vent system, humidity is released while dry air is drawn in to keep food crispy. For moist foods, a pan of water can be placed on the floor of the unit to create optimal humidity from the radiant element.

Included with this unit are fixed wire slides which are made of nickel chrome-plated wire with 2 3/4" spacing. This narrow unit accommodates up to (8) 12" x 20" x 2 1/2" or (8) 13" x 18" size sheet pans (sold separately). This holding cabinet can be transported easily due to its (4) 2" polyolefin casters. This transport unit is mounted on a platform with a travel latch / hasp and is protected by a full perimeter bumper. The swing-up rear handle ensures smooth maneuvering during transport. This holding unit can be stacked with other units (sold separately), comes with a 6' long cord with a NEMA 5-15P plug, and operates at 120V with an output of 875W.

Insulated and non-insulated holding cabinets both offer the same function by holding food at safe temperatures for hours until ready to serve, but for best results it's important to make a purchase based on your desired application. Non-Insulated Holding Cabinets are intended for applications where the doors will be closed for the majority of the day, such as proofing bread or keeping back-up portions hot. Insulated Holding Cabinets are better suited for keeping food hot when the doors will be opened and closed much more frequently, since they are better equipped at retaining the heat.
