Metro: A Metro story. The proper way. So, Prime and Proper is the classic steak house, reimagined for the 21st century. We do all of our dry-aging in house. We have a 14 ft. wide wood fire grill that we cook all of our steaks and chops on, and an extensive, really fantastic wine list. The proper way to dry age. Dry-aging is just a great process because as it ages, some of that moisture inside of that beef, the water of the beef, is removed, which essentially concentrates the flavors within that particular piece of meat. And then as those proteins and enzymes kind of break things down it really changes the overall flavor and just makes it absolutely fantastic. The proper set-up: MetroMax. The MetroMax shelving is really great for that dry-aging space. I know I've personally seen dry aging rooms where the pieces of beef that are going on those shelves are extremely heavy, and they tend to have bones that can be very sharp and they can gauge metal-epoxy that is on some of the other types of shelving, so it helps us not have to worry about any of that coming off, any rust or anything like that happening with those shelves. There's a lot of factors that help us keep that room organized and clean and rotated properly. First of all, the rolling shelving was really helpful for us to be able to move around such large product in a smaller space, as well as keeping the air flow throughout the room as consistent as it needs to be. And then we're also able to take those mats out of the shelves once a week when we rotate the dry-aging room and when we receive our next week's delivery and we can take those mats off and run them through our dish machines and clean up the rails super quick and easy and put everything back together. A proper honor. Being named as Detroit restaurant of the year has been an awesome achievement, not only for myself but for everybody that's involved. We were really fortunate to be blessed with a lot of awesome people who work here and we've all kind of come together as a sort of collaborative effort to make sure that every guest has that great experience. Use this Metro AX336GX3 MetroMax i polymer add-on shelving kit to maximize space for a long-lasting storage solution. Providing both durability and versatility, the unit is designed to attach to an adjacent shelving unit and share 2 of its posts. This method adds storage space while minimizing the overall footprint.

To connect this add-on unit to a complete MetroMax shelving unit, 2 "S" hooks are provided with each of the kit's 4 shelves. These 18" x 36" shelves and hooks come with (2) 63" posts, which support one end of the shelves.

This particular unit is made entirely of polymer, making it both rust- and corrosion-resistant. It even boasts Microban antibacterial coating to protect against mold, mildew, bacteria, fungus, and other harmful bacteria. For added convenience, the slatted shelf mat is removable for easy cleaning by hand or in a dishwasher.
