Make show-stopping tiered cakes quickly and easily with this Matfer Bourgeat 681902 complete French style square wedding cake frame. This cake frame's unrivaled and patented system consists of superimposed inserts and stainless steel frames that allow for sky-high cakes to be assembled in record-breaking time. Bake your cake, then use this system to do the rest!

To use, start by cutting the sponge for tiers 1 and 2, using the stainless steel frames as guides. Two 600mm x 400mm sponge sheets are needed for the 6 segments. Place the frames on top of the cakes, then use a paring knife to cut out the sponge inside the shapes. For a clean cut, do not use the stainless steel shapes as cutters. Repeat as desired for additional layers. Follow the same procedure for tiers 3 and 4, cutting out sponge rings, and for tier 5, cutting a full circle. One 600mm x 400mm sponge sheet is needed for these three tiers.

Once all of the sponge is cut, it's time to fill and layer each tier. For tiers 1, 2, and 5, simply add your filling on top of the sponge, then add another layer of sponge and repeat until desired height is achieved. For tiers 3 and 4, place the superimposed insert in the center of the sponge ring, and fill/layer around the insert.

To set the filling, place the filled frames in the freezer or store at sub-zero temperatures. Once set, use a blowtorch to warm up the stainless steel segments. Remove the stainless steel frames from the cake and the filling, and it's time to assemble the cake.

Start by placing the superimposed insert for the first tier on a cake stand. Around that insert, place each of the three cake segments. Place the insert for the second tier atop the first one and assemble that tier's cake segments around it (and above tier 1). Place tier 3 on top of tier two's insert, then do the same for tier 4 on top of tier three. Complete the assembly by placing tier 5 on top. Now that the cake is assembled, decorate as desired.

This complete cake frame makes a 5-tier round cake that's easier to cut than traditional tiered cakes. Transportation of the finished cake is safer and easier, too, thanks to the deconstructed design. Plus, since each insert has open handles, handling of the cake tiers for assembly and positioning is easy and efficient.
