The surface is made of smooth, durable stainless steel while the interior contains a substance called eutectic liquid that freezes at -6 degrees Fahrenheit. It also retains color temperatures for an average of 20 to 30 minutes.

Once the cold plate has been frozen, apply tempered chocolate to the surface. The chocolate will go into heat shock once in contact with the surface, and by gently lifting the chocolate off the plate with a spatula you can form the chocolate into shapes and designs to decorate your desserts. Use it to create chips, lattices, and nests for elegant, sophisticated desserts.
