The best base for a variety of soups. We primarily use it for New England Clam Chowder, but it is also wonderful in pureed vegetable soups like asparagus our spinach. It is so much easier than starting with flour and making a roux. It also provides a good flavor that is easy to build upon. It has a nice consistency and doesn't leave chunks. I highly recommend this!
