This pizza peel is made with a hard oxide anodizing treatment that provides maximum corrosion-, scratch-, and bump-resistance for long-lasting durability in your high-volume kitchen. This treatment also delivers a high heat-resistance that is 3 times greater than traditional anodized aluminum! The head-handle joint is reinforced with 3 large, overlapping rivets for guaranteed stability.

The Evoluzione line adds to the flexibility and lightness of the Azzura line with a smaller peel head and technical, specifically-positioned perforations that discharge flour from two directions for optimized results. It also assists in reduced friction when moving pizzas, leaving movements in and out of the oven smooth and incident-free. The square shape has milling around most of the curve of the head, making it easy to slide under a pizza from the side or the front.

The lightweight handle and sliding grip are made with a high-density polymer material that is highly resistance to impact and heat. The handle's 47" length keeps hands away from the hot oven while moving the pizzas in and out or rotating while they cook. Plus, the handle features a loop at the end for easy hanging and storage.

How can I properly care for this pizza peel?

Hand wash with a soft cloth and dry thoroughly. To seal, wipe with food safe oil, like mineral oil, on the surface of the peel. Do not expose the peel to a dishwasher, abrasive sponges, caustic cleaners, or acidic detergents. Never allow the peel to be soaked in water. Avoid leaving the peel on hot surfaces as this increases the chance of warping. If the peel warps, leave overnight with the warp facing up and it should flatten.

This peel is perfect for larger pizza sizes. The peel is not just for turning or removing the pizza from the oven, it also is great to insert your pizza into the oven. My favorite thing about taking a pie out of the oven is, if you give the peel a shake, any excess flour comes off of the bottom. This gives you a cleaner tasting pizza.
