This versatile oven features steam and convection cooking modes as well as combination and rethermalizing settings that thoroughly cook foods faster than steam or convection alone. This oven features a durable 20-gauge stainless steel cabinet exterior and a seamless stainless steel cooking chamber with coved corners. It's designed with a powerful, high-efficiency motor, a full-perimeter door seal, and triple-pane glass for maximum energy efficiency. It also features right-side door hinges and a retractable spray hose for quick, easy rinsing. This combi oven has a 6-level removable pan rack for optimal air flow and sanitation with tilt-resistant rails and crosswise pan racking for better ergonomics. It has a temperature range of 86-572 degrees Fahrenheit and holds up to 6 full size steam table pans, 6 FlexiRack pans, or (2) 6-chicken grids. It features a 10' power cord.

This combi oven is designed with DynaSteam2 boilerless steam generation for built-in, energy-saving heat transfer as well as precise humidity generation and heat exchange. It features variable 5-speed, auto reverse fans that move air in alternating directions for even heating and ClimaSelect Plus humidity control to set and maintain humidity levels at 10 percent increments from 0-100 percent RH. It also features a steam exhaust system and WaveClean automated self-cleaning system for efficient water usage with a 2-in-1 cleaner/rinse-aid cartridge.

This FlexFusion Platinum series combi oven features a Chef's Touch Control System with a multi-sensor food probe and a protected 7" high-resolution, full-color touchscreen display for automatic or manual cooking. The display features video assistance, 350 AutoChef cooking programs and recipes, recipe creation (up to 20 steps), and is compatible with mobile apps (sold separately) for cooking, cleaning, and diagnostics. The oven also features a USB port for convenient download of programs, diagnostic messages, or HACCP data. The screen displays temperatures in Fahrenheit or Celsius and features several language choices to support a diverse staff. Use this system to adjust individual settings before or during cooking.
