The baking process begins with proofing your products in a cavity that includes separate heat and humidity controls and an overflow drain and pan. Once the proofing process is over, easily move the pans to the oven, where the patented Jet Air reversing fan system moves air evenly in separate directions to help you bake faster and more evenly! The proofing cavity will hold 9 full-size (18" x 26") sheet pans while the oven holds 6 sheet pans.

We knew we would like this oven but never would have guessed how much! This oven with the steam make amazing bread and no one ever gets tired of smelling fresh baked bread! The top shelf gets a little toasty on top so the bake time gets reduced. But never have had any issues with this oven in the last two years. Would buy it again.
