The tropical sun blazes bright over the southern region of Colombia; to protect delicate coffee beans from its harsh rays, coffee trees are grown on cool mountainsides under the canopies of large shade trees. When it matures, the coffee is carefully hand-harvested and washed to separate the coffee cherry from the beans, which are allowed to dry and mature under the warm sunshine. Finally, the beans are slowly roasted to achieve a lighter medium roast level with an appealing, deep-cinnamon color. The final product is a lively coffee with bright acidity and deep complexity - perfect for a daily morning cup and special occasions alike! It features a tannic, walnut-like mouthfeel and a full, roasty body with an herbal-tinged cocoa finish.
