Cambro 5 Steps for Proper Food Storage

Proper food storage techniques are imperative, and with Cambro, they're easy to implement. Watch this video to learn about 5 steps for proper food storage and how Cambro can help your facility fulfill each one.

65 years ago Cambro started with one product: the Camtray. One product. One skew. Today, Cambro manufactures over 13,000 products which equal 33,000 skews. Since 2005, the center of Cambro's world wide warehousing and distribution system is Cambro City of Industry, or COY facility. Located 30 miles north of Cambro's headquarters in Huntington Beach California, the COY facility boasts an impressive 320,000 sq. ft. of space that warehouses over 1 million cases of product. While its main purpose is the central warehouse for Cambro, the activity at COY includes more than you think, such as fulfilling sample request, receiving, shipping to regional distribution around the world, and shipping replacement parts. 25,000 cases of product come in every day from our manufacturing facilities, most of it from our Huntington Beach factories. Cambro manufactures and distributes products all over the world. Regional facilities like those in Germany, Turkey, India, and China all manufacture a selection of products for those markets. The rest of Cambro products sold there and all over the world come from COY. The City of Industry facility operates 24 hours a day, 5 days a week. Three shifts work around the clock. Each shift has the responsibility to pick a certain number of products and ship them out by the end of their shift. 1st and 2nd shifts also receive and put away products from our factories in Huntington Beach. 2nd shift also handles the product samples shipment. More than 3,000 sample requests are processed monthly. Samples are kept in a dust free environment in our efficiently designed sample room. With 47 dock doors, COY can accommodate inbound and outbound traffic. To process 25,00 cases ever day you need automation. Our automated warehouse system scans the bar code and then matches it up with the correct order and quantity of item that is supposed to come through. Those orders are grouped together on pallets for shipping. The pallet flow operation is where all the high moving products are warehoused several pallets deep. The equipment zipping around this massive warehouse is all electric;12 pickers and quite a few forklifts. One charge is enough for a busy shift around the warehouse. Just like 65 years ago with the first Camtray, Cambro still relies upon our employees, like the ones at COY, to make sure the products the food service industry relies on makes it to them on time.

When we store, for example, a product like tomatoes that we slice and prepare, we put them in the Cambro container with the red lid. Then, if there's a product currently on the line, the red lid is sitting on top of the container that's in the cooler, that way we know that there's product on the line and what's in the container in the cooler has not yet been put on the line. When we prepare a product like broccoli, for example, we know that one bag fits into an 8 qt. container, so that when it's washed and prepped it gets put into the container that has the red lid. Then as product diminishes while it's on the line, we'll sometimes have a smaller lid because the product will fit in a smaller container, for example, with the green lid. For products like meats, cheeses, and dairy, we use the translucent lids and we do the same procedure that we do for all the vegetables. If there's a product that's on the line, the lid stands on top of the other container that's in the cooler. When we first opened our restaurant in 2008, we sampled a variety of different containers and we found that Cambro was the superior container to any of the other ones because of the efficiency of how it all fits in the cooler and with the safeness of how the product is stored. The lids don't come undone, it's really easy to stack the product, and it keeps the product the absolute freshest. As we have used the Cambro exclusively now, we've found that our waste is under 2% for the entire restaurant at all of our locations, including our franchise locations who also exclusively use the Cambro product. For that reason, we find that food stays the freshest, it extends the life of that so that we're not throwing anything away. We don't even use expiration dates because it retains its freshness.

Food service operators all over the world believe deeply in the value of Cambro products, not only to help make their jobs easier every day, but to help store, deliver, and serve food safely to their customers. Improperly stored food becomes vulnerable to cross-contamination and compromised quality. Just having the proper lids can make a big difference. Food service operators can follow these 5 keys towards a HACCP-friendly storage system. (1) Store products in clear containers with tight-fitting lids to minimize handling and reduce risk of contamination. Another benefit is the cost-savings from food spoilage. (2) Keep all raw and cooked products separated to prevent cross-contaminated. Cover with lids rather than plastic wrap to protect contents against spills and contaminates. (3) Cover, label, and date all food storage container using dissolvable labels. This reduces the risk of harmful bacteria on sticky label residue. (4) Rotate the food using the First-In, First-Out system to ensure the oldest food is used first. (5) Maximize storage space with square containers. Cambro food storage solutions help food service operators save money and enhance their food safety efforts.

Exactly what I needed. I prep large amounts of jambalaya every morning to sell and needed a storage container that was large but not too big that it wouldn't fit in my 3 compartment sink. These are great and stack easily for more efficient storage.

from Lulamaes Cajun Cuisine on

We love our Cambro containers. We were able to get the perfect size to fit in our cabinets. They are great space savers and ideal for dry food storage.

I am a fan of Cambro food storage containers and I use this square 8 quart to mix and proof my double batches of bread dough. They also work when I start the stretch and folds to build the gluten and the see through container lets me see how much it's risen.

I love Cambro products. Easy to stack and use. We will be using this to grow our sourdough starter. Also great for storing soups and large batch sauces.

from Standing Stone Vineyards on

These containers are perfect! I love the height of them. It can go to the top of our cooler, but doesn't take up any additional space.

from Kiki Kawa on

I much prefer these clear cambros to the white ones or the frosted ones. While they may be more prone to cracking I think its much more important to be able to see how much and what is inside the container without having to take the lid off, prevents more wastage with less work.

from Pearl River Delta on

It's a Cambro. Nuff said. Awesome, air tight storage container that's stackable, durable, and food safe for just about any application. My current use for these (and their accompanying lids) is storing various flours and grains. I also use them for my sourdough growth and bulk fermentation for 2-4 loaf doughs. If you need a 1 gal+ storage solution, you can't go wrong. One now though, these 6qt models don't have the built in handles that the round, soft plastic version and the 8qt+ versions have. If you fill this thing up with water/liquid it will end up weighing around 15-20 lbs and they can get slippery, meaning they're best for dry good in my experience.

Have seen these on cooking shows and I had to have one. Brineing meats first come to mind. I also bought the red lid. It is also nice to keep smaller items stored.

Incredibly useful container for any use. We regularly use them for both boiling water and dry ingredients. Lid is snug and secure. Very durable container.

from Lucabe Coffee Co. on

This Cambro 8 qt, can fit around 10 lbs of flour if properly filled. It holds it all in place and you can easily estimate how much flour you have taken from looking the printed measurements. They perfectly stack inside one another for easy storage and the smaller 6 QT Cambro can also fit inside of these saving you twice the space.

Sleek and functional design that can be used for a variety of needs. I love this for sous vide cooking, flour, sugar, soup transportation, etc. The lip provides a good handhold as well, without being bulky or hindering the visibility of what is inside.

Like all Cambro food storage containers, these are a winner. It's a slightly bigger size than the 6qt version, but shares a lid with them, and stacks super easily. Part of a total food storage system.

This Cambro 8 Qt. clear square polycarbonate food storage container with winter rose gradations are perfect for food storage. They clearly label the quantity of the product and are easy to stack.

from Wayne's Smoke Shack on

This larger Cambro container is great. It makes measuring containers so easy. These are great value and are fit perfectly in oour stores. We will be buying them again!

I make a lot of big batch soups at home. This 8 quart size Cambro was perfect for cooling and storing it! Would buy again.

Good quality - easy to stack and seem very durable even with all of the tossing, washing and stacking that we do on a daily basis. We have bought these in every size available.

from Denise Payton on

These are the most space efficient way to store and stack our drinks from our bubbler that have a longer shelf life. They clean up easily and are very durable.

Love these containers!! We use them to store just about anything from dry goods to cooked foods to marinate. They also do a great job of measuring items as well.

from Beast and Bottle on

This 8 quart cambro is my favorite container to strain small batches of stock into. Since it is clear it is also easy to identify what it contains. And cambro containers have no trouble surviving the wear and tear of use.

We actually use this primarily for Sous Vide with a little circulator. Works great as a dry storage bin but also useful in Sous Vide application.
