Traditional Egg Puff Waffles (makes about 5 waffles)
2 eggs
7 fl. oz. full cream evaporated milk or whole milk
3.5 fl. oz. water
2.5 fl. oz. oil
1/2 tsp. vanilla extract (if desired)
1/2 bag or about 2 1/2 cups Bossen waffle powder
Whip eggs, then add milk, water, oil, and vanilla extract and stir until smooth. Add waffle powder and stir until smooth. Cover batter with plastic wrap and let sit for 30 minutes. Preheat waffle iron to 350 degrees Fahrenheit. Pour waffle batter into waffle machine, heat for 4 minutes each side. Remove egg waffle, decorate with your favorite toppings, such as frozen yogurt, syrup, chocolate, or mini mochis and serve!
