To use, ensure the cutting board is on a smooth, dry surface so the anti-slip feet will keep the board from sliding while you work, and the handle is hanging off the work surface so it can turn freely. Located in the gap in the middle of the board, grab the cutting wire and pull the wire out until it can fit over the wheel of cheese, rotating the handle to let out the wire if needed. Place your cheese wheel or cheese piece onto the board and center it with the wire going right through the center of the wheel. Before cutting, use a scoring knife (sold separately) to make the initial cut all the way around the wheel, which will create less stress of the wire and give you longevity of use. Once the cheese is scored and the wire is centered, rotate the handle carefully clockwise, which will pull the wire through the cheese, and continue slowly rotating the handle clockwise until you've sliced all the way through the cheese. Ensure you avoid turning the handle counter-clockwise during cutting, as the cutting wire could bend.
