Hi, I'm Amanda from Bob's Red Mill Natural Foods and today i'm making farinata using Bob's Red Mill garbanzo bean flour. Our garbanzo bean flour is made with just one ingredient - you guessed it, garbanzo beans! You've probably heard of them before, and you might know them as chick peas. Here at Bob's Red Mill, we grind whole, dried garbanzo beans on our mills in our dedicated gluten-free facility. The results if a finely ground flour that is great for gluten free baking. Farinata is a traditional Italian dish which is considered a flatbread. I think that is kind of selling it short though - it is much more substantial than your traditional flatbread. It's gluten free, dairy free, easy to make, and super nutritious thanks to the high fiber, high protein garbanzo bean flour. Here's what you'll need to make farinata: 2 cups Bob's Red Mill garbanzo bean flour 2 1/2 cups water 6 TBSP olive oil 1 tsp sea salt 1 tsp ground black pepper 1 large white onion, peeled and thinly sliced 1 tbsp minced fresh herbs Today, i'm using rosemary. You'll also need a bowl, a whisk, and a 12 inch cast iron skillet. Start by combining the flour and salt. Slowly add the water, whisk it to make sure you break up any clumps of flour. Next, stir in about half of the olive oil - that's 3 tbsp or so. Now cover the bowl and put it in the refrigerator for about an hour. Okay, here's the chilled batter - i just pulled it out of the fridge. Now we're going to add that black pepper and give it a stir. Next i'm gonna heat the screaming olive oil in a skillet on the stovetop over medium-high heat. I'm gonna add the onion to the skillet and cook it for about 2 minutes. When the onions start to get a little translucent, you're ready to move on. The onions are ready so i'm going to turn off the stovetop, and next i'm gonna add the batter to the skillet. Just pour it right in.and make sure you get it all in there. Spread it around a little bit and sprinkle the herbs over the top. Spread them around evenly in there. And now you put the whole thing, skillet and all, into the oven and bake it for thirty minutes at 4100 degrees Fahrenheit. Alright, here it is! Farinata! Fresh out of the oven. You can tell it's done because it's firmed up in the center and it's lightly browned on top. Now it just needs to cool for a few minutes, then i can cut it into wedges and it will be ready to serve. This is really good. It's kind of creamy in the middle, a little crispy around the edges. It's a great combination. On it's own like this a piece of farinata makes a delicious and filling snack, but you can also turn it into a meal by topping it off with some sauce and a sprinkle of cheese then serve it with a salad or roasted vegetables and you have a great dinner.
