Ateco Sculpting Set, Shaker, Cutting Wheel, and 7 1/2" Roller

Hi, I'm Julie Bashore and I'm going to highlight 10 Ateco tools that I use for ruffling. Here, we have the tool set with a wide variety of tools that are double sided. We also have the Ateco shaker, 2 offset pallet knife spatulas, the Ateco cutting wheel, fondant wheel, the 2 inch food grade bristled brush, the jumbo bore tool that I co-designed with Ateco in conjunction with the jumbo ruffle cutter and the jumbo ruffling pad. Last but not least, we have the miniature 7 1/2 inch plastic rolling pin. Let me introduce you to each Ateco tool. This is the 7 1/2 inch plastic rolling pin that I use for rolling fondant really thin and making it even and smooth. Secondly, we have the jumbo ruffle cutter. It is a scalloped cutter that is nice and large and it cuts out big ruffles so you aren't rolling and cutting constantly. Instead, you can do it all in one go. Use the pallet knife to remove the center and then use the jumbo ruffling pad to soften the edges. Lightly dust it with corn starch and use the food-grade bristled brush to smooth it out. It's an excellent Ateco brush and you'll find that the bristles will hold firmly without pulling out over the fondant. The next tool that we are going to use is from the Ateco set. It is the shell tool. I'm going to use this to indent a shell design into my ruffle while working on the ruffling pad. After that, I'm going to work with the bore tool to cup the edges. This is if you want a slight cup and a little curl to the ends. However, I also have the jumbo bore tool. By working with the larger end of the jumbo bore tool, you can achieve a more delicate design and impression. The next tool I will be working with is the ruffling tool and I'm going to ruffle directly on the mat. This tool is cone shaped and we need to catch the edge of the gum paste and fondant with the wide edge. You can very simply roll it around the edge and get a more defined ruffle that depends on the final look you are trying to achieve. The secret of success is to keep the ruffle's edge right on the edge of the tool. To open up the ruffle and give a nice, neat edge to the center, cut it open and use the bore tool. Trim off the center edge with the fondant wheel because sometimes it can dry out depending on the weather. Rather than having a cracked edge, you can simply trim it with the wheel. Working again with the bore tool, you can make scallops on the opposite end. I just catch the end of the gum paste and fondant and push it out gently with the bore tool to finish it off with a nice scallop. With the miniature bore tool, we can do a more delicate design by using the same technique. This gives a nice, clean, finished edge to your ruffles. Finally, with the shell tool, you can use the shell to do a design on the edge so it matches the ruffle design while creating a little scallop.

Ateco Crimpers and Sculptors

Hi, I’m Julie Bashore from the Sugar Arts Institute and I’m going to show you how to work with the Ateco crimpers. There are a lot of things that I really like about these crimpers. The first being that the edgers are plain, not serrated, giving a much cleaner crimp with the exception of two crimpers where the serrated edge really enhances the design. They are made of stainless steel and have little O rings on them to regulate the opening. The crimpers are very easy to handle; most people when working with crimpers work directly on the side of the cake, however, because I don’t have a straight eye and am inclined to be a little clumsy, I find that often I go crooked on the cake and then I have to strip the whole cake down. So rather than having that frustration, I prefer to work on panels and attach them to the cake, and this allows me a lot more freedom to create an assortment of designs. So, let’s go ahead and see how they work. The first crimper that I’m going to be using is called the closed V. The word crimp means to pinch, so effectively what you are doing is you’re touching the surface, squeezing it closed, releasing it, and up. The word pinch does not mean go below the surface and draw blood. Just set the crimper on the surface, squeeze it closed, open and release. Let me show you how that’s done. Just sit it on and squeeze, making sure that each crimp touches the previous one. There you have a nice even row of crimpers. Then, turn the crimper upside down, and making sure that the ends touch one another, bring the bottom of the crimper up to the top and make a V design. The 2 V’s together create a diamond, which is a delicate design in itself. Keep working down the design to create a panel. The rule of thumb is straight lines for men and curves for ladies, so this is a great design that can be used on a man’s cake because it’s straight lines. Remember: touch down, squeeze, release, and up. Each crimp must close tightly on the previous one. There you have a design of diamonds that can be cut out separately and attached as a panel directly to the cake. That was the closed V, and now we’re going to work with the open V which is like a quilted diamond. The same effect, touch down, squeeze closed, release, and up. Come into the next row buffing the crimper right up against the previous design and squeeze the bottom to the top and keep going. This gives a panel with the opposite effect of the previous crimper, the closed crimper. It gives a quilted look, which is very elegant and very tidy, and also because it is straight lines, is ideal for a man’s cake. And I will get the modeling tools to show you how you can actually finish off the design so it looks attractive. Working with the small bowl tool, I’m going to create another dimension by gently scalloping the outer edge of the panel. Just catch the edge and push it out. I’m going to do the same with the closed. This neatens the edge and also gives it a third dimension, so you’ll actually have 3 layers.

    I'm an amateur cupcake decorator...I just decorate cupcakes for my nephew's birthdays or occasional special family events. I'm not sure how to use all of the different sculpting tools, so I usually just use the ones with the balls on the end or the knife shaped one. These are great for making those little details look nice, instead of using kitchen utensils or just my finger. They're easy to clean and have held up well over the years. Maybe one day I'll look into how to use all the other tools so I can do some fancier things with my cupcakes.

    I have a set of these sculpting tools from another brand and they keep snapping at the head. I have used these only once so far and I already feel the difference in quality.     I haven't needed to buy any additional sculpting tools since I bought this set. This is a great basic set for working with Fondant. All of the tools have held up well with nothing breaking with heavy usage. If you work with fondant you will love this set.
