We use The Agropur Ingredients Reddi-Sponge 50 lb. Dough Conditioner in our pullmans and milk buns. This unassuming product improves the dough's elasticity and extensibility. It is easier to work with and aids in the fermentation process. For us it extends the shelf life for certain products, which is really helpful.
