How to Season a Pan

For a carbon steel pan, start by washing, rinsing, and drying the pan. Heat the pan on your range on medium to high heat, then add shortening to the pan. Use a clean dry towel to spread the shortening around the interior of the pan, creating an even coat. Remove the pan from the heat, wipe out the excess shortening and let it cool. You can repeat this process up to 3 more times. For a cast iron skillet, preheat your oven to 400 degrees Fahrenheit. Line a baking pan with aluminum foil and set aside. Wash, rinse, and dry your skillet. Place the skillet in the oven for 15 minutes. Remove and coat the entire skillet with shortening, inside and out. Place the skillet in the oven for 45 minutes with the baking pan on a rack below it to catch any mess. You can repeat this process up to three more times.

How can I properly care for cast iron surfaces?
In order to prevent unwanted build-up of oils, grease, and food, surfaces should be cleaned after use while still slightly warm. Harsh chemicals or scouring pads should not be used—only hot water and a cloth or sponge are needed. If some areas require extra cleaning, a mild scouring pad can be used. Please refer to our Pan Seasoning Guide for further information on properly cleaning and seasoning cast iron surfaces.

    I bought for home use and have been extremely satisfied with the purchase. The press produces tortillas at an even thickness that cook up well. You do need to use wax paper between the plates to prevent sticking. Homemade tortillas add that extra level to any Mexican dinners or party I would highly recommend.
    Good design. Surdy and presses well. We put a small sheet of parchment on the top and bottom got easy removal and frying of corn tortillas.
    This is the real corn/ flour tortilla press used in restaurants around NYC. Strong, sturdy and heavy duty. 8” is the most popular size. I recommend it.
    A solid piece of equipment. Its cast-iron heaviness works to your advantage, as it slides around less than the aluminum alternatives. The action on the handle is very smooth and it's easy to get into a rhythm of using it. Makes a perfect-thickness tortilla and requires little to no cleaning if lined with deli sheets.
    I have now used this tortilla press a couple of times and really enjoy it. We use it for tortillas but we also use it to press sausage patties since we haven't bought a hamburger press yet. The patties come out a little uneven but they cook just fine and make a great breakfast sandwich for my kids.
    If you are making tortillas from scratch, having a great tortilla press is important. This one is very durable and strong. I also like that it's nearly 8"
    This tortilla press is just ok. It’s built solidly enough, but it’s hard to start pressing down the dough with the handle. I usually have to press the top down by hand, and then press with the handle.

    The 8" Cast Iron Tortilla Press hinge was misaligned. Webstaurant quickly fixed the issue. We passed on the offer to get a replacement and will be trying to fix the hinge. We won't know how well the pre-seasoned coating will perform until we get the press fixed.
