How can I best maintain the non-stick qualities of this item?
To prevent food from sticking to your non-stick surface, we recommend lightly coating it with oil and wiping off any excess with a soft cloth or napkin. My favorite thing about this tart pan is that the hole for the removable bottom doesn't go all the way to the edges; it's a smaller circle in the center. This means that when you pick it up, you don't accidentally push up the bottom and mess up your delicate crust. Excellent design. The non-stick surface is a nice touch too. It's not the most elegant of dimensions, I would have preferred it to be longer but narrower instead because I think that looks far more elegant. It's more of a workhorse pan...The area is slightly larger than a 9" round pan (this has a bit less that 92 square inches compared to 81) so I use it when I'm feeding a slightly larger crowd.
