Hello, my name is Michael - owner of Beta bread bakery in Pennsylvania, and Metro shelving plays a big role in helping me bake the bread every day.
So with my bread, I have a long fermentation time for the bread to rise, and those ferment in buckets overnight. Basically, we take them out, shape them, and chop them up into different products, and we use this heated cabinet here, the C5, to help proof the bread, and what's nice about it is it has good spacing - I was able to customize it so I could fit 11 trays in here, which for me is about 55 breads. In here I happen to have some of the Italian cheese breads, I've got some baguettes, and over here we have some of our raisin bread, and some other bread proofing right now.
This cabinet is real convenient, the finish is great, and I dont have any problems with them ever breaking down. I've been using this one for I tihnk at least 3 or 4 years. The door action is great, it closes nice.
