You want to begin with your portafilters locked in place in the grouphead so they are always hot. Remove the portafilter and purge the grouphead to run out any lower temp water that was resting in the line. Your portafilter should always be clean, hot, and dry before dosing the espresso. Grind your espresso fresh for each shot you pull. Level the grounds using a circular motion and tamp evenly. Insert the portafilter into the grouphead and brew immediately. Keep an eye on the time it takes to reach your preferred volume of espresso and adjust the grind to achieve the optimal extraction time. Serve and enjoy.
