This straight grade bleached flour is milled from soft white wheat to produce a fine textured flour. A low-protein flour that is a happy medium between all-purpose flour and cake flour, this pastry flour is a perfect addition to any bakery wanting to achieve the perfect texture and structural integrity for their baked goods. Use this flour to construct soft, flakey danishes, filled with tangy cream cheese or a fruit preserve filling and topped off with a warm glaze, as well as muffins, pie crusts, and cookies with optimal chewiness.
This premium pastry flour is prepared by carefully selecting and milling the finest soft white wheat to produce a top-quality baking flour. What sets this flour apart from the competition is its inherent low protein content, resulting in a soft flour that produces the ideal balance between tenderness and flakiness that is optimal for a variety of baked goods. With a slightly higher gluten content than cake flour, this flour offers more strength and solidity, and is not recommended for tender cakes, like sponge cakes.
