Designed for use with a full size bun pan (sold separately), the mold features (28) 2 5/8" diameter compartments that shape dough into perfectly sized choux pastry. It's also designed for high-volume bakeries, as it lasts for 3000 to over 5000 baking cycles. Withstanding temperatures from -40 to 464 degrees Fahrenheit, the pan even allows you to move bread dough from the oven to the freezer without dirtying multiple pans.
