You cant go wrong with this dough conditioner. They should call it dough improver. Really shines during the kneading stages, you can tell right when your dough transforms into properly worked product, its like suddenly zap, the feel of the dough changes and its ready for the first proof, cuts hand kneading time in about half, produces a nice moist crumb, seems to improve freezer storage quality considerably, and extends shelf life of finished loaves, all around first rate product. I'm using a level teaspoon per cup of high protein, 14%, bread flour, for the 1st 4 cups, no more, regardless of loaf weight, with excellent results.
